Apple Turnovers
- Crisp apples, peeled, cored, and cut into slices - Granny Smith or Mutsu apples work well
- 1 can crescent rolls
- 1 cup orange juice
- 1 cup sugar
- 1 stick butter
- Cinnamon sugar or apple pie spice
Wrap apple slices in crescent rolls, pinching closed. Heat orange juice, sugar, and butter until melted. Place rolls in glass baking dish. Drizzle liquid over rolls and sprinkle with spice. Bake at 350 degrees for 35 minutes, or until well browned. Baste during baking. Serve with ice cream or whipped cream.
Jodie's Apple Cake
Preheat oven to 325 degrees. Thoroughly grease and flour a tube pan (or spray w/ a baking spray that contains flour).
Cream:
- 3 eggs
- 1 1/4 cups canola oil
- 2 cups sugar
Add:
- 2 1/2 cups self-rising flour
Fold in:
- 1 cup chopped pecans
- 1 cup coconut
- 2 large or 3 small apples, peeled and chopped
Bake 1 1/2 hours. Do not test with toothpick - will be wet.
Glaze
In medium saucepan combine ingredients. Boil for 3 minutes while stirring.
- 1 stick butter
- 1/2 cup packed brown sugar
- 1/3 cup milk
- 1/2 tsp. cinnamon
- 1/2 tsp. allspice
Poke holes in cake with a bamboo skewer. Pour hot glaze on hot cake. Let cake cool completely before removing from pan.
Cranberry–Apple Crumble
- 4 peeled and chopped tart apples
- 2 cups fresh cranberries
- 2 T. flour
- 1 cup sugar
Mix together flour and sugar. Toss with apples and cranberries.
Topping:
- 3 pkgs. cinnamon apple instant oatmeal
- 1/2 cup flour
- 1/2 cup melted butter
- 1/2 cups brown sugar
- 1 tsp. cinnamon
- 3/4 cup chopped pecans
Mix together ingredients. Crumble on top of apples and cranberries. Bake at 350 degrees for 45 minutes.
